Ingredients
1 26cm diameter cake tin
FOR THE PINEAPPLE CRUMBLE
- 1 baby pineapple
- 2 tbsp pineapple jam
- Zest and juice of 1 organic lime
- 100 g flour
- 80 g sugar
- 80 g cold butter
- 1 handful of marshmallows
- Shortcrust pastry from the chiller cabinet
- 1-2 tbsp shredded coconut
EXTRAS
- Butter to grease the mold
- Flour for sprinkling
Preparation
- Preheat the grill to 160 °C with the lid closed.
- Peel all the skin off the pineapple, remove the core, quarter and cut into finger-thick pieces. Then marinate in the marmalade and the zest and juice of the lime.
- Prepare a crumbly dough from the flour, sugar and butter and chill if possible. Cut the marshmallows in half.
- Grease the mold with butter and sprinkle with flour. Then line the mold with the dough, overlapping slightly. Prick the pastry evenly with a fork. Now chop up the pineapple pieces, crumble and marshmallows and spread loosely over the pastry, sprinkle with grated coconut.
- Grill the pineapple crumble for 35-40 minutes.
