Eggplant with vegan teriyaki marinade

Ingredients
Ingredients for 4 portions
  • 2 medium-sized eggplants
  • 2 pressed garlic cloves
  • 50 ml sesame oil
  • 50 ml soy sauce
  • 2 tbsp sweetener
  • 1 tbsp ground ginger
  • 1 tbsp roasted sesame seeds

Preparation

  1. Simmer the sesame oil, soy sauce, garlic and ginger in a pan over a medium heat, stirring frequently, until the sauce begins to thicken.
  2. Remove the sauce from the heat and preheat the grill to 220 °C.
  3. Wash the eggplants and cut lengthwise into strips. Brush each slice with the teriyaki sauce and place on the hot grill.
  4. Fry on each side and brush with more sauce so that the sauce caramelizes on the eggplant.
  5. Garnish with toasted sesame seeds and serve with the remaining sauce.
