Watermelon, cucumber and feta salad

- 1 small watermelon (approx. 1 kg)
- 1 large cucumber
- 200 g feta cheese
- 1 bunch of fresh mint
- 1 bunch of fresh parsley
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- Salt and pepper to taste
Preparation
- Remove the seeds from the watermelon and cut into small cubes.
- Wash the cucumber, halve lengthwise and cut into thin slices.
- Crumble the feta into small pieces.
- Wash the fresh mint and parsley, pat dry and chop finely.
- Mix the watermelon, cucumber, feta and chopped herbs in a large bowl.
- Mix the olive oil and white wine vinegar in a small bowl. Season with salt and pepper.
- Pour the dressing over the salad and mix well.
- Serve the salad immediately or leave to infuse in the fridge so that the flavors combine.
