For the dough
- 600 g flour (Tipo 00 if possible)
- 390 ml ice-cold water
- 3 g fresh yeast
- 12 g salt
For the topping
- 100 g strawberries
- 50 g nut nougat cream
- 10 g chopped pistachios
- Mint leaves
- Powdered sugar
Preparation
For the dough
- Dissolve the salt and water in the mixing bowl.
- stir in 200 g flour and dissolve the yeast in it.
- Add the rest of the flour, switch on the dough hook and knead the dough at medium speed for 10 minutes.
- Cover the dough and leave to rise at room temperature for 3 hours.
- After every hour, stretch and fold the dough: With moistened hands, remove the dough from the bowl on four sides, pull upwards and fold over the remaining dough.
- After 3 hours, transfer the dough to a floured work surface.
- Divide the dough into 4 portions of 250 g each.
- Form balls of dough with your hands.
- Cover the dough balls and leave to rise in a bowl or baking dish in the fridge for 12-24 hours.
- remove from the fridge 2-3 hours before use and bring to room temperature.
For the pizza
- Preheat the pizza oven to 380 °C.
- Wash and hull the strawberries, drain and halve or quarter them.
- Shape the dough with flour or semola into a pizza base without edges.
- Cut the pizza base at even intervals 4-5 cm deep.
- spread 1 teaspoon of nut nougat cream on the cut surfaces.
- Hold a piece of dough by the corners with both hands, fold in towards the center and shape the corners into a point to form a star-shaped flower.
- Prick the center of the dough several times with a fork so that the steam can escape better later.
- Now place the dough flower in the pizza oven and bake for approx. 2 minutes until golden brown.
- Remove the pizza from the oven.
- Spread the remaining nut nougat cream in the middle of the pastry.
- Arrange the strawberries on top and sprinkle with chopped pistachios.
- Garnish with mint as desired and dust with powdered sugar.
