Pizza dessert flower

Pizza can be more than just savory! With our recipe for the dessert pizza flower, you can give your guests a sweet surprise that is guaranteed to delight them. This creative dessert pizza combines a crispy base with fruity and chocolaty toppings in a beautiful flower shape - a real eye-catcher and a treat for the palate at the same time.

For the dough
  • 600 g flour (Tipo 00 if possible)
  • 390 ml ice-cold water
  • 3 g fresh yeast
  • 12 g salt
For the topping
  • 100 g strawberries
  • 50 g nut nougat cream
  • 10 g chopped pistachios
  • Mint leaves
  • Powdered sugar

Preparation

For the dough
  1. Dissolve the salt and water in the mixing bowl.
  2. stir in 200 g flour and dissolve the yeast in it.
  3. Add the rest of the flour, switch on the dough hook and knead the dough at medium speed for 10 minutes.
  4. Cover the dough and leave to rise at room temperature for 3 hours.
  5. After every hour, stretch and fold the dough: With moistened hands, remove the dough from the bowl on four sides, pull upwards and fold over the remaining dough.
  6. After 3 hours, transfer the dough to a floured work surface.
  7. Divide the dough into 4 portions of 250 g each.
  8. Form balls of dough with your hands.
  9. Cover the dough balls and leave to rise in a bowl or baking dish in the fridge for 12-24 hours.
  10. remove from the fridge 2-3 hours before use and bring to room temperature.
For the pizza
  1. Preheat the pizza oven to 380 °C.
  2. Wash and hull the strawberries, drain and halve or quarter them.
  3. Shape the dough with flour or semola into a pizza base without edges.
  4. Cut the pizza base at even intervals 4-5 cm deep.
  5. spread 1 teaspoon of nut nougat cream on the cut surfaces.
  6. Hold a piece of dough by the corners with both hands, fold in towards the center and shape the corners into a point to form a star-shaped flower.
  7. Prick the center of the dough several times with a fork so that the steam can escape better later.
  8. Now place the dough flower in the pizza oven and bake for approx. 2 minutes until golden brown.
  9. Remove the pizza from the oven.
  10. Spread the remaining nut nougat cream in the middle of the pastry.
  11. Arrange the strawberries on top and sprinkle with chopped pistachios.
  12. Garnish with mint as desired and dust with powdered sugar.
