Hot Beef Rub

Ingredients
Quantity 1kg meat/fish
FOR THE RUB
- 2 tbsp coarse sea salt
- 1 tsp brown cane sugar
- 2 dried chili peppers
- 1 tbsp paprika powder, sweet
- 1 tbsp cayenne pepper
- 1 tbsp ground cumin
- Zest of 1 organic lemon
Preparation
- Process all the ingredients into a dry spice mixture (rub) using the compact food processor.
- Seal airtight until ready to use and store in a cool, dry place, ideally in vacuum containers. Properly packaged, the rub will keep for at least two months.
