Grilled cheese breakfast sandwich
- 2 slices of sandwich toast
- 2 strips of bacon
- 2 slices of cheese (e.g. mozzarella and/or cheddar)
- 2 eggs
- Spring onions
- Salt
- Pepper
- Butter
Preparation
- Spread butter on one side of the toast slices.
- Fry the bacon in a non-stick frying pan until crispy and then put to one side.
- Beat the eggs with a fork in a small bowl, season with salt and pepper and add to the pan.
- Place the slices of toast, butter side up, on the still liquid egg and fry until the egg mixture has set.
- Use a spatula to turn the slices of toast with the egg, fold the protruding egg onto the slices of toast.
- Top with cheese and bacon and fold up the toast.
- Fry the toast on both sides until crispy.
