Crispy crusted salmon with fan potatoes
You've had enough of our juices, the typical "healthy food" at the beginning of the year and want to finally try out a new savory recipe? No problem. Hearty, delicious and yet it won't make you feel guilty about your good intentions. Fresh salmon with a crispy crust and a spicy potato fan. A simple oven dish for young and old.

Ingredients
Ingredients for 2 portions
Fan potatoes
- 25 g herb butter
- 5-6 medium potatoes, mainly waxy
- Salt
Salmon
- 2 tbsp frozen dill
- 2 tsp medium hot mustard
- 1 tsp liquid honey
- 1 slice of toasted bread
- 1 salmon fillet with skin approx. 600 g
- Juice of 1/2 lime
- white pepper
Preparation
- Heat the oven to 200° top/bottom heat.
Fan potatoes
- Brush a shallow baking dish with olive oil and sprinkle with a little salt.
- Wash the potatoes thoroughly, place a toothpick on the left and right and cut through to the toothpick. (Only cut in, do not cut through!)
- Place the potatoes in a baking dish, spread the soft herb butter over the potatoes and sprinkle with salt.
- bake for 30-35 minutes.
Salmon fillet
- Wash the salmon, pat dry, cut into 2 pieces, sprinkle with lime juice and leave to stand.
- Toast the bread, crumble finely and mix with the dill, honey and mustard.
- Season the salmon with salt and pepper and coat with the honey and mustard mixture.
- Use a toothpick to check whether the potatoes are almost done. If it is, add the salmon to the potatoes and bake for a further 15 minutes.
- Remove from the oven and garnish with dill and parsley.
