Grilled halibut bread skewers with pancetta
Recipes for grilled salmon and prawns are a dime a dozen and I have already published recipes for them on the blog. But now comes another dish from the sea - grilled halibut. Skewered with simple ciabatta and pancetta and the simplest of spices, it will be the next eye-catcher at your barbecue. So skewer it up and off you go.

Ingredients for 4 skewers
Halibut bread skewers with pancetta
- 750 g boned and skinned halibut
- 80 g pancetta
- 60 ml olive oil
- 1 tbsp freshly chopped rosemary
- Ciabatta
- Salt
- Pepper
Preparation
- Preheat the grill to 200 °C.
- Dice the halibut and bread. Cut the pancetta into wafer-thin strips. Mix the olive oil and rosemary, season with salt and pepper. Add the halibut and bread and mix well. set aside for 5 minutes.
- Skewer one end of 1 strip of pancetta, then alternately skewer the fish and bread cubes and weave the pancetta in between.
- Grill the skewers for approx. 6 minutes, turning frequently, until the fish is cooked through and the bread is charred in places.
