Quick tomato bruschetta with ricotta

A vegetarian starter from the grill. Delicious baguette with grill branding and fresh topping. The popular Italian dish has now also made it into the SEVERIN recipe collection. With super simple preparation and the right grill, you too can master the new Italian cuisine from the grill and delight with a delicious tomato bruschetta. Bon appetit!

Tomato bruschetta with ricotta
  • 1 baguette
  • 250 g cherry tomatoes
  • 180 g ricotta
  • Fresh basil leaves
  • 3 tbsp olive oil
  • Salt
  • Pepper

Preparation

  1. Preheat the grill to 200 °C.
  2. Cut the baguette into approx. 18 slices. Spread with approx. 1 tablespoon of oil. Cut the tomatoes in half.
  3. Spread the bread on the grid and grill for approx. 1-3 minutes with the lid closed. Turn from time to time.
  4. Heat 1 ½ tablespoons of oil in a pan and add the tomatoes. Quickly turn the tomatoes cut side down and season with salt and pepper. Cover and cook without stirring for approx. 10-15 minutes until the juice has evaporated. Then place in a bowl.
  5. Drizzle the ricotta with the remaining 1/2 tablespoon of oil and season to taste. Place the basil in another bowl. Garnish the grilled baguette slices with the tomatoes, ricotta, basil, salt and pepper.
