Ingredients
Ingredients for 6-8 portions
FOR THE BRISKET
- 2-3 kg beef brisket, not trimmed
- 3-4 tbsp olive oil
- 1-2 hot beef rubs,

FOR THE MOP SAUCE
- 150 ml beef stock
- 25 ml apple cider vinegar
- 4 tbsp sugar beet
- 2-3 tbsp Worcester sauce
EXTRAS
- 1-2 sheets of butcher paper
Preparation
- Rub the brisket all over with oil and sprinkle with the seasoning mix on all sides. Then cover and marinate in the fridge for at least 4 hours.
- Preheat the grill to 120-130 °C with the lid closed.
- Insert the core temperature probe and set the desired target temperature (92-95 °C). If possible, place the brisket on the indirect zone and grill for 2-2 1/2 hours. Turn occasionally.
- After 1/3 of the grilling time, remove the brisket from the grill and place on 2 sheets of butcher’s paper. Mix all the mop sauce ingredients together. Mop the brisket and seal thoroughly. Continue to grill the brisket for 5-6 1/2 hours.
- Finally, unwrap the brisket and grill for 1-1 1/2 hours (core temperature 92-95 °C).
