Grilled figs with overseas rum foam

Grilled fruit is a great idea for a delicious dessert. Why not try this? Grilled figs with overseas rum foam. Unusual, but aromatic and tasty!

Preparation 20 minutes

FOR THE RUM FOAM

  • 6 egg yolks
  • 2 cl finest overseas rum
  • 100 ml white wine
  • 35 g sugar
  • Pulp of 1 vanilla pod

FOR THE FIGS

  • 8-12 figs
  • Juice of ½ lemon
  • 2-3 tablespoons brown cane sugar
  • for sprinkling
  • A few leaves of basil

Preparation

  1. Preheat the grill to 500 °C with the lid open.
  2. Place all the ingredients for the rum foam in a deep metal bowl and whisk over a bain-marie for several minutes until thick and frothy (optimum core temperature 82-85 °C). Then set aside and stir occasionally.
  3. Cut the figs in half, drizzle with lemon juice and sprinkle with sugar. Then grill on the BoostZone for 2-3 minutes on sight. Turn once.
  4. To serve, top the figs with rum foam and garnish with basil.
