Grilled figs with overseas rum foam

Ingredients for 4 portions
FOR THE RUM FOAM
- 6 egg yolks
- 2 cl finest overseas rum
- 100 ml white wine
- 35 g sugar
- Pulp of 1 vanilla pod
FOR THE FIGS
- 8-12 figs
- Juice of ½ lemon
- 2-3 tablespoons brown cane sugar
- for sprinkling
- A few leaves of basil
Preparation
- Preheat the grill to 500 °C with the lid open.
- Place all the ingredients for the rum foam in a deep metal bowl and whisk over a bain-marie for several minutes until thick and frothy (optimum core temperature 82-85 °C). Then set aside and stir occasionally.
- Cut the figs in half, drizzle with lemon juice and sprinkle with sugar. Then grill on the BoostZone for 2-3 minutes on sight. Turn once.
- To serve, top the figs with rum foam and garnish with basil.
