- A sprig of rosemary
- A sprig of thyme
- One red onion
- Two cloves of garlic
- Olive oil
- A tin of tomatoes
- 500 ml passata
- Salt
- Pepper
- 30 g raw cane sugar
- A pinch of nutmeg
- One medium-sized zucchini
- One red bell pepper
- One yellow bell pepper
- One medium-sized eggplant
Preparation
- Preheat the oven to 175 degrees fan.
- Pluck the herbs, peel and finely dice the onion and garlic cloves.
- Sauté the onion and garlic in a small pan with a little oil and deglaze with the tinned tomatoes and passata.
- Season the tomato sauce with salt, pepper and sugar and stir in the herbs.
- While the sauce is simmering, wash and clean the zucchinis, peppers and eggplant. Cut the vegetables into slices of the same thickness.
- Layer the vegetable slices in an oiled casserole dish and pour over the tomato sauce.
- Cook the ratatouille in the oven for 15 minutes.
- Serve warm.
