Tortilla Española

  • 500 g potatoes, mainly waxy
  • 150 g onions
  • 4 eggs
  • 250 ml olive oil
  • Salt

Preparation

  1. Peel the potatoes, cut into small cubes and sprinkle with a level teaspoon of salt.
  2. Finely chop the onions.
  3. Heat approx. 250 ml olive oil in a pan (Ø 24 cm) and add the potato cubes.
  4. The potatoes should be just covered with oil. Fry the potatoes over a medium heat for approx. 12-15 minutes.
  5. In a second pan, fry the onions in a little olive oil for 10-15 minutes until translucent and golden brown. Place the eggs in a large bowl, whisk vigorously with a whisk and season with salt.
  6. Separate the potatoes from the olive oil using a sieve. Add the potatoes and onions to the eggs in the bowl and leave to stand for 3-5 minutes.
  7. Heat 2-3 tablespoons of olive oil, add the tortilla mixture to the pan and fry for 2 minutes.
  8. When the mixture starts to brown, turn the tortilla over using a plate. To do this, place the plate on the tortilla and turn the pan over so that the tortilla is on the plate.
  9. Then slide the tortilla into the pan.
  10. Fry for about a minute on the reverse side. The tortilla should still be runny on the inside.
