Berliners from the hot air fryer

- 500 g slightly thawed halved apricots or fresh apricots in season
- 270 g sugar
- 50 g marzipan
- 2 tbsp lemon juice
- 230 g wheat flour type 550
- 50 g milk
- 20 g butter
- 10 g fresh yeast
- 2 g salt
- 3 tbsp vanilla sugar
- 1 egg
- 50 g melted butter
- Sugar for topping
Introduction
Over the course of time, the pastry has been given countless names, which vary depending on the region. Here in the Sauerland, the sweet temptation is called Berliner. in Berlin, on the other hand, they are called pancakes, so watch out when you order them from the bakery. The classic pastry is usually baked in fat, but nobody wants to throw their good intentions overboard in February. That’s why the little pastry balls are now also available in a slightly healthier version from the hot air fryer. Add homemade jam for the filling and the sweet snack is ready to enjoy.
Now get to work on the dough and bon appétit. I can attest to the fact that fresh, warm doughnuts taste even better than chilled ones.
Preparation
Apricot and marzipan jam
- Place the apricot halves, sugar and lemon juice in the food processor and chop. Make sure that the container is only filled to the maximum capacity, chop in several portions if necessary.
- Heat the chopped ingredients in a pan at approx. 100 °C and cook for 20 minutes.
- Chop the marzipan in a food processor.
- Add the marzipan to the apricot mixture and stir for 1 ½ minutes.
Berlin
- Heat the butter and milk in a pan to approx. 35 °C.
- Place all the ingredients for the dough in a bowl and mix with a dough hook for 4 minutes on the lowest setting and then knead for 8 minutes on a medium setting.
- Leave the finished dough to rise in a warm place for 60 to 75 minutes.
- Shape the dough into 5 equal-sized round pieces and leave to rise in a warm place for another 20 to 30 minutes.
- Line the hot air fryer with baking paper and heat to 170 °C. Make sure that the baking paper still allows air to pass through. To do this, poke small holes in the baking paper.
- Brush the dough balls with melted butter, place in the air fryer and bake for 9 minutes.
- Immediately remove the doughnuts from the air fryer, brush again with melted butter and roll in sugar.
- Put the jam in a syringe and squirt it into the doughnuts. (Of course, homemade is not like the baker’s and the jam does not sit perfectly in the middle. But it tastes just as good)
