Christmas muesli cookies

Crispy oatmeal cookies to go with your coffee or as an addition to your Christmas plate. They are made with just a few ingredients, are quick to prepare and still taste really good. Of course, you can't compare them to chocolate cookies with a caramel filling or chocolate chip cookies, but if you're in a hurry, these cookies are the perfect choice!

Christmas muesli cookies

  • 250 g tender rolled oats
  • 250 g whole grain rolled oats
  • 250 g butter
  • 120 g sugar
  • 100 g chopped hazelnuts
  • 80 g cornflakes
  • 3 eggs
  • 1 tbsp spelt flour
  • 1 tbsp honey
  • 1 sachet vanilla sugar
  • ½ tsp baking powder
  • ½ TK cinnamon

Preparation

  1. Melt the butter.
  2. Mix with the rolled oats and leave to cool.
  3. Mix the sugar and eggs.
  4. Add to the oats together with the remaining ingredients.
  5. Spoon small mounds onto a baking tray.
  6. Bake for approx. 10 minutes at 220°C.

If you like, you can also mix in chocolate drops, dried fruit or whatever you fancy.
