One pot pumpkin pasta
What goes with Halloween? That's right: self-carved pumpkins! Just right for the season and, above all, the time of year. This one-pot pumpkin pasta is perfect for the cold days and, in combination with a few other ingredients, a simple pumpkin is quickly transformed into a delicious pasta that will enchant everyone. Just remember: everything has to be eaten by midnight at the latest!

One pot pumpkin pasta
- 500 g noodles
- 700 g Hokkaido pumpkin
- 700 ml water
- 500 ml cream
- 2 tbsp vegetable stock
- 150 g pickled sun-dried tomatoes
- 80 g walnuts
- 80 g Parmesan cheese
- 1 handful of basil leaves
- Salt and pepper
Preparation
- Halve the pumpkin, remove the seeds and grate coarsely.
- Put the pasta, pumpkin, vegetable stock, cream and water in a pan and bring to the boil.
- Simmer over a medium heat for 8 to 10 minutes, stirring regularly.
- Season to taste with salt and pepper.
- Cut the dried tomatoes into small pieces and chop the walnuts.
- As soon as the pasta is creamy, stir in the tomatoes, walnuts and basil.
The pasta is ready so quickly, now simply arrange it on a plate, sprinkle with Parmesan and you’re ready to enjoy!
