Three homemade spice blends

Real barbecue masters have their own seasoning mixes and give their dishes a personal touch. They don't use the same mixture for every barbecue. No - meat, fish and vegetables each get their own touch. That's why today we have the recipes for three home-made spice mixes that bring that special something to home barbecue plates.

Hot Meat Edition
  • 1 dried chili pepper
  • 5 dried tomatoes
  • 3 stalks of dried thyme
  • ½ tsp black peppercorns
  • A pinch of cumin seeds
  • ½ tsp mustard seeds
  • ½ granulated garlic
  • 1 tsp brown sugar
Fish Delight
  • 2 cloves dried garlic
  • 1 tbsp dried dill
  • dried zest of half a lemon
  • 1 dried chili pepper
  • 2 tsp fennel seeds
  • 1 tsp colorful pepper
  • 1 tsp brown sugar
  • ½ tsp salt
Veggy Italy
  • 2 stalks of dried rosemary
  • 2 sprigs dried tarragon
  • 1 dried garlic clove
  • 1 teaspoon dried basil
  • 2 tsp sage
  • 1 teaspoon dried lemon peel
  • 3 tsp salt
  • 1 tsp pepper

Preparation

1. Hot Meat Edition – delicious for steaks

  • First put the chili pepper and sun-dried tomatoes in your food processor and chop them as finely as possible.
  • 2. Later, sprinkle in the thyme and peppercorns and crush them several times so that the peppercorns are as small as possible. Do the same with the cumin and mustard seeds.
  • 3. Once the coarser ingredients have been finely chopped, add the garlic and sugar and mix everything together again thoroughly. You can now use the spice.

TIP The spice mix can be used as a rub, i.e. you can simply rub it into your meat to give it a nice crust. Or you can add a little oil and turn it into a marinade. Coat your meat with this as usual.

2. Fish Delight – for fish and seafood

  • 1. First, take the dried garlic and put it in your food processor.
  • 2. If you only have normal garlic in the house, you can easily dry it yourself. To do this, cut it into thin slices, set your oven to 50 degrees and then put it in for 4 hours. Or you can use a dehydrator and make a stock of it right away.
  • 3. Throw the lemon zest, chili pepper, fennel seeds and pepper into the food processor and chop everything thoroughly.
  • 4. Add the sugar and salt at the end and mix everything together several times.

TIP You can use the spice mix for any dish with fish or seafood.

3. veggie Italy – for vegetables of all kinds

  1. First remove the leaves from the stems of the rosemary and tarragon and place the leaves in your food processor together with the dried garlic. Now chop everything into small pieces.
  2. Now add the basil together with the sage and lemon zest.
  3. Grind your spice mix once more and then add salt and pepper.
  4. Now mix everything again in the appliance and pour the spice mixture into an airtight container.

TIP You can also store your three homemade spice blends in a vacuum container to keep them fresh.vacuum-compatible containerin a vacuum container. That way you’ll have them for a long time.
