Beet hummus
The perfect hummus must be creamy, light and delicious. Forget the store-bought hummus from the supermarket and just try it yourself. You don't even need many ingredients for this beet hummus. And the ingredients are also very good for your body, as the chickpeas are high in protein and help to build muscle and the fiber ensures good digestion. Beet also has a lot to offer: The root vegetable contains high amounts of vitamin B, potassium, iron and, above all, folic acid. So go on, do something good for your body!

Beet hummus
- 350g chickpeas
- 100g beet
- 2 tsp tahini
- 25ml beet juice
- 1 clove of garlic
- 1 tsp salt
- 2 tsp rosemary
- 3 tsp lemon juice
- 1 tsp cumin
Preparation
- Preheat the oven to 200°C.
- Peel the beet and cut into bite-sized pieces. Then place on a baking tray lined with baking paper and drizzle with a little oil.
- Roast the beet in the oven for 40 minutes.
- Place all the ingredients (beet cooled) in a blender or food processor.
- Depending on the desired consistency, simply add 1-2 tablespoons of water.
TIP: It’s best to use fresh beet, but you can also use the shrink-wrapped variety – the taste will be just as delicious, but the hummus won’t have the same beautiful red-pink color.
