Creamy ice cream with mirabelle plums
Turn the sweet mirabelle plums of summer into a refreshing homemade mirabelle plum ice cream! With this recipe, you can conjure up a delicious combination of ripe mirabelle plums and creamy ice cream. - 200g mirabelle plums (pitted)
- 60g sugar
- 150ml whole milk (3.5%)
- 200ml cream
- 2 tbsp dextrose
- ½ tsp cornflour
- 2 tbsp skimmed milk powder
Preparation
- Remove the stones from the mirabelle plums.
- Caramelize with half of the sugar in a small saucepan for about 10 minutes until creamy.
- Mix the other ingredients together in another pan and simmer briefly.
- Finely puree the caramelized mirabelle plums with a blender and stir into the mixture.
Optional: Pass the pureed mirabelle plums through a sieve to make the ice cream without small pieces of mirabelle plum. - Allow the ice cream mixture to cool well and, once cooled, place in the ice cream maker for approx. 30 minutes.
- Pour the creamy ice cream into a shallow freezer container and leave to cool further in the freezer compartment.
