Crispy chicken burger from the Airfryer

Discover a healthier version of the delicious classic with our recipe. Our hot air fryer gives the chicken a crispy bite without using a lot of oil. The result? A juicy, crispy chicken fillet that fits perfectly between the burger buns. With fresh vegetables and your favorite sauces, the Crispy Chicken Burger is a treat for all the senses!

Ingredients
Ingredients for 2 portions
For the stalemate
  • 1 chicken breast
  • 100 ml cucumber water
  • 30 g flour
  • 30 g panko or breadcrumbs
  • 1 tbsp cornflour
  • 1 tbsp BBQ rub or spice mix of your choice
  • 1 egg white
  • 60 ml buttermilk
  • 2 tbsp vegetable fat for frying
For the burgers
  • 2 burger buns
  • 50 g butter
  • 4-5 lettuce leaves
  • 1 tomato
  • 4 g gherkins
  • 60 g mayonnaise
  • ½ tsp miso paste
  • 1 tsp Sriracha sauce

Preparation

  1. The day before or 6 hours before preparation: Rinse the chicken breast under cold running water, pat dry and remove tendons if necessary. Slice the breast lengthways and flatten between two sheets of baking paper.
  2. Place the pieces in a freezer bag or bowl with the cucumber water and leave to infuse in an airtight container for 6-12 hours.
  3. On the day of preparation: Mix the flour, panko, cornflour and spices in a deep dish.
  4. Whisk the egg whites and buttermilk together in a second bowl.
  5. Remove the chicken breasts from the marinade.
  6. First roll in the panko flour mixture and toss gently.
  7. Then add first to the buttermilk mixture and then back to the flour-panko mixture.
  8. Lightly press down the breading and repeat the process with all the pieces.
  9. Leave to stand on a wire rack for 15 minutes.
  10. For the burger sauce, whisk together the mayonnaise, Sriracha and miso paste in a bowl.
  11. Wash the lettuce and shake dry.
  12. Cut the tomato and gherkins into thin slices.
  13. Bake the chicken pieces in the SEVERIN Multi-Hot Air Fryer for 16 minutes at 190°C.
  14. In the meantime, slice and butter the burger buns.
  15. Toast the cut surfaces in a frying pan over a medium heat until golden brown.
  16. Spread the chili mayonnaise on the bun halves and top the bottom half with lettuce, gherkins and gherkins.
  17. Place the finished chicken pieces on the burger halves, top with the lid and enjoy.
