Who hasn't been there? You're late in the morning, you don't have time to prepare something healthy for your lunch break and you end up picking something up at the bakery or even coming home just as hungry as when you left. There is a solution to this problem, which has become increasingly popular in recent months: Meal prepping. Simply cook your food for one or more days in advance and pack it. Here I show you 5 healthy and simple recipes that are perfect.

Gnocchi salad
Ingredients
Ingredients for 4 portions
Gnocchi salad
- 800 g gnocchi
- 50 g pine nuts
- 100 g rocket
- 7 tbsp olive oil
- 2 tbsp balsamic vinegar
- 1 tsp basil
- 1 jar of pickled tomatoes
- 1 onion
- Salt
Preparation
Preparation time: 20 minutes
- Cook the gnocchi and leave to cool.
- Fry the pine nuts in oil until golden brown.
- Cut the tomatoes into small pieces.
- Wash and roughly chop the rocket.
- Dice the onion.
- Put everything in a bowl.
- Season with olive oil, balsamic vinegar, salt and basil.
- My tip: Salad can be refined with Parmesan cheese.
Wholemeal pasta with lentil bolognese
Ingredients
Ingredients for 2 portions
Wholemeal pasta with lentil bolognese
- 200 g wholemeal pasta
- 350 g tomatoes
- 50 g red lentils
- 100 g cream
- 50 ml water
- 2 tbsp olive oil
- ½ tsp herbs de Provence
- 1 onion
- 1 eggplant
- 1 clove of garlic
- Salt
- Pepper
Preparation
Preparation time: 25 minutes
- Peel and dice the onion and garlic.
- Wash and chop the eggplant and tomato.
- Sauté the eggplant, onion and garlic with the oil in a pan for approx. 5 minutes.
- Add the tomatoes, lentils and water.
- simmer gently for 10 minutes.
- Cook pasta.
- Stir the cream into the sauce.
- Put the pasta and sauce in a bowl and mix together.
- Season to taste with pepper, herbs and salt.
Rice bowl
Ingredients

Rice bowl
- 100 g rice
- 100 g rocket
- 60 g cashew nuts
- 260 g chickpeas
- 10 g parsley
- 1 tbsp lime juice
- 2 carrots
- 1 orange
- 1 bunch of radishes
- Salt
- Pepper
Preparation
Preparation time: 25 minutes
- Soak the cashew nuts in water.
- Cook rice.
- Peel and grate the carrots.
- Cut the radishes into slices.
- Clean the rocket.
- Peel and chop the orange.
- Chop the parsley into small pieces.
- Puree the cashew nuts with the water, lime juice and parsley.
- Season with salt and pepper.
- Mix all the ingredients together in a bowl.
Chicken pan with broccoli and rice
Ingredients

Chicken pan with broccoli and rice
- 200 g chicken breast
- 150 g cherry tomatoes
- 250 g cooking cream
- 150 g rice
- 70 g Parmesan cheese
- 2 tbsp olive oil
- 1 small broccoli
- Salt
- Pepper
Preparation
Preparation time: 20 minutes
- Cook rice.
- Divide the broccoli into florets.
- Cut the chicken into strips.
- Quarter the tomatoes.
- Brown the chicken and season with salt and pepper.
- Remove the chicken from the pan.
- Sauté the broccoli for 3 minutes.
- Add the cream and parmesan.
- simmer for 5 minutes.
- Fold in the chicken.
- Put the rice into boxes separately from the sauce.
Vegan spring rolls
Ingredients

Vegan spring rolls
- 150 g pak choi
- 50 g glass noodles
- 50 g peanuts
- 50 g mung bean sprouts
- 5 tbsp soy sauce
- 3 tbsp wheat flour
- 1 tbsp brown sugar
- 12 rice papers
- 2 spring onions
- 2 garlic cloves
- 2 carrots
- 1 pointed pepper
- 1 chili pepper
- 1 lime
- Coriander leaves
- Oil for frying

- Wash and chop the spring onion.
- Halve and squeeze the lime.
- Finely chop the garlic.
- Cut the carrots into small sticks.
- Cut the pointed peppers into small strips.
- Finely chop the chili pepper.
- Wash the pak choi and remove the leaves from the stalks.
- Finely chop the coriander and peanuts.
- Cook and drain the glass noodles.
- Soak the rice paper briefly in warm water.
- Mix the vegetables together in a bowl.
- Add the lime juice, soy sauce and sugar.
- Roll the vegetable mixture in rice paper.
- Mix the flour with approx. 100 ml water and coat the individual rolls with it.
- Fry the rolls carefully in hot fat.
- Leave the fried spring rolls to cool on a rack.
