Mochi ice cream
Mochi is a Japanese cake made from rice that can also be prepared as ice cream. This cake is traditionally eaten in Japan at New Year. However, this recipe can also be enjoyed as ice cream in warm summer temperatures. The shell consists of just two ingredients: Glutinous rice flour and sugar. The glutinous rice flour is made from mochi rice (or glutinous rice). The mochi are filled with bean paste, chocolate filling or ice cream. In addition to their exceptional taste, mochi are gluten-free, lactose-free and vegan. Unlike conventional cakes, mochi can therefore be eaten without hesitation :-) Of course, you can also buy the Japanese specialty in various stores. However, making your own is more fun and brings a bit of Japanese tradition to your home.

Mochi ice cream
- 400 g ice cream
- 100 g glutinous rice flour
- 80 g sugar
- Potato starch for dusting
Preparation
- Divide the ice cream into 4 equal portions, shape into balls, wrap in cling film and leave to freeze in the freezer for approx. 1 hour.
- Meanwhile, mix the glutinous rice flour and water together with a whisk.
- Then stir in the sugar.
- Pour the finished mixture into a pan and heat for approx. 10 minutes over a high heat, stirring regularly.
- Now dust the work surface with the potato starch and spread the dough out on it.
- Now divide it into 4 equal parts.
- Shape these into small flat cakes and place them in the freezer for approx. 1 hour.
- Finally, place an ice cream scoop in each pastry case and cover it completely with the pastry.
- Place the mochi in the freezer for at least 10 minutes before eating.
