Vegetarian halloumi doner kebab
Fresh oven vegetables, baked halloumi and a creamy garlic yoghurt rolled up in a warm wrap. That's exactly what you'll find in this recipe. Vegetarian halloumi doner kebab
- 200 g halloumi
- 10 g parsley
- 4 g vegetable spice mix
- 100 ml yoghurt
- 10 ml olive oil
- 4 tortilla wraps
- 1 red onion
- 1 cucumber
- 1 tomato
- 1 zucchini
- 1 red pointed pepper
- 1 lettuce heart
- 1 garlic clove
- Salt
- Pepper
Preparation
- Wash the vegetables and herbs and pat dry with kitchen paper. Preheat the oven to 200 °C top/bottom heat (180 °C fan oven).
- Remove the zucchini ends and cut into approx. 1.5 cm pieces. Peel the garlic and peel the red onion and cut into eighths. Halve and deseed the red bell pepper, cut the bell pepper halves into bite-sized pieces.
- Spread the vegetables on a baking tray lined with baking paper, leaving some space for the halloumi. Mix the vegetables with olive oil, the spice mix, salt and pepper and bake for approx. 20 minutes. Remove the garlic after 10 minutes.
- Cut the halloumi into pieces and add to the vegetables. Bake for a further 15 minutes.
- Cut the cucumber and tomato into thin slices and the lettuce heart into 1 cm wide strips.
- Press the roasted garlic in a small bowl, pluck the parsley leaves and chop finely. Mix the yogurt with the garlic and half of the chopped parsley and season with salt and pepper.
- Reheat the wraps on a baking tray in the oven for the last 2 minutes of the baking time for the oven vegetables.
- To fill the wraps, spread with garlic yogurt. Top with lettuce strips, tomato and cucumber slices, add oven vegetables and halloumi pieces and sprinkle with parsley. Roll up and enjoy.
