Asian baked tofu with basmati rice & peanut satay sauce

You can cook lots of great things with tofu, but have you ever baked it? Then it's high time you did! The two most important components of tofu are the spices and the preparation. We'll show you how today!

Asian baked tofu with basmati rice & peanut satay sauce
  • 150 g wholegrain rice
  • 100 g baby pak choi
  • 300 g tofu
  • 45 g peanut butter
  • 10 g peanuts
  • 20 ml soy sauce
  • 22 ml sweet chili sauce
  • Dried basil
  • Olive oil
  • Salt

Preparation

  1. Wash the vegetables carefully.
  2. Put the rice in a sieve and rinse with cold water until it runs clear.
  3. Pour water into a pan, add salt and bring to the boil briefly.
  4. Cook the rice there for about 10 minutes, put the lid on and leave to stand for another 10 minutes.
  5. Cut the tofu into 1-2 cm pieces and then pat dry with kitchen paper.
  6. Marinate the cubes in olive oil and dried basil.
  7. Spread the tofu cubes in an ovenproof dish.
  8. Now leave the tofu on the grill with the lid closed for 25 minutes. Turn it from time to time during this time.
  9. Meanwhile, chop the baby pak choi and season with olive oil and salt.
  10. Cook the pak choi at 150 degrees.
  11. For the sauce, stir together the peanut butter, soy sauce and sweet chili sauce.
  12. Once the tofu is cooked, place it in a bowl with the pak choi and fold in the sauce.
  13. Finally, you can add the rice and garnish the mixture with peanuts and serve!
