Spanish tapas

Ingredients
Dates wrapped in bacon
  • 200g Medjool dates with stone
  • 300g bacon in thin slices
Albondigas
  • 500g mixed minced meat
  • 50g herb quark
  • 1 egg
  • 400ml beef stock
  • 1 tbsp smoked paprika powder
  • 2 garlic cloves
  • 2 onions
  • 2 limes
  • 1 tbsp brown sugar
  • 200g tomato paste
  • 400g chopped tomatoes
  • 50 ml red wine
  • Pepper
  • Salt
  • Olive oil
Feta cream with chili
  • 200g feta cheese
  • 100g cream cheese
  • 1 chili pepper
  • 10g salad seasoning
  • 50ml milk
  • Hint of chili flakes
Dates wrapped in bacon

Preparation

  1. Remove the remains of the blossom from the top of the dates (if present) and cut open lengthwise with a sharp knife. Remove the pit.
  2. Wrap half a slice of bacon around each date.
  3. Fry the wrapped dates in a pan with vegetable oil until crispy brown on all sides. If possible, use an uncoated cast iron pan.
Albondigas – Spanish meatballs in tomato sauce

Preparation

  1. Mix the minced meat with the herb quark, smoked paprika powder, egg, pepper and salt and knead until a homogeneous mixture is formed. Shape the minced meat into small balls.
  2. Dice the onions and finely slice the garlic. Fry both in a little olive oil and sprinkle with the brown sugar. Add the tomato purée and fry briefly.
  3. Deglaze with the beef stock, red wine and lime juice. Add the chopped tomatoes.
  4. Fry the meatballs in a second pan until crispy brown on all sides.
  5. Add the balls to the sauce and bring to the boil until they are fully cooked.

Feta cream with chili
  1. Combine all the ingredients and puree.
  2. Season to taste and serve with bread.
