Pear muffins with crumble

Ingredients
For the dough
- 250 grams wheat flour
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 1/2 teaspoon grated lemon peel
- 1/4 teaspoon cinnamon
- 100 grams brown sugar
- 2 medium eggs
- 90 milliliters sunflower oil
- 220 grams yogurt or buttermilk
- 2 small pears approx. 200-250g pulp
For the crumble
- 40 grams wheat flour
- 50 grams muesli mix or oat flakes & seeds
- 50 grams sugar
- 1/4 teaspoon cinnamon
- 60 grams soft butter
Preparation
- Preheat the oven to 180 degrees top and bottom heat. For the crumble, knead all the ingredients together – first with the dough hook, then with your fingers. Leave to cool. Peel, core and dice the pears.
- Mix the dry ingredients for the muffin batter. Whisk the liquid ingredients in a second bowl. Add the liquid ingredients to the dry ingredients. Stir everything together briefly (!) but vigorously.
- Fold three quarters of the pear pieces into the batter. Pour the batter into paper or silicone cases; it is best to also place them on a muffin tray.
- Spread the remaining pear pieces and crumble on top and press lightly into the batter. Bake the muffins for approx. 22 minutes.
