Preparation time 20 minutes Cooking time 20 minutes
Ingredients
For the dough
  • 250 grams wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 1/2 teaspoon grated lemon peel
  • 1/4 teaspoon cinnamon
  • 100 grams brown sugar
  • 2 medium eggs
  • 90 milliliters sunflower oil
  • 220 grams yogurt or buttermilk
  • 2 small pears approx. 200-250g pulp
For the crumble
  • 40 grams wheat flour
  • 50 grams muesli mix or oat flakes & seeds
  • 50 grams sugar
  • 1/4 teaspoon cinnamon
  • 60 grams soft butter

Preparation

  1. Preheat the oven to 180 degrees top and bottom heat. For the crumble, knead all the ingredients together – first with the dough hook, then with your fingers. Leave to cool. Peel, core and dice the pears.
  2. Mix the dry ingredients for the muffin batter. Whisk the liquid ingredients in a second bowl. Add the liquid ingredients to the dry ingredients. Stir everything together briefly (!) but vigorously.
  3. Fold three quarters of the pear pieces into the batter. Pour the batter into paper or silicone cases; it is best to also place them on a muffin tray.
  4. Spread the remaining pear pieces and crumble on top and press lightly into the batter. Bake the muffins for approx. 22 minutes.
