Apple and cinnamon muffins

- 200 g flour
- 175 g sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 teaspoon salt
- 2 tsp cinnamon
- 100 g butter, melted
- 1 egg
- 150 g buttermilk
- 2 apples, peeled and diced
Preparation
- Preheat the oven to 180 °C (fan oven). Line a muffin tray with paper cases.
- In a large bowl, mix the flour, 150 g sugar, baking powder, baking soda, salt and 1 tbsp cinnamon.
- In another bowl, mix the melted butter, egg and buttermilk well.
- Add the liquid ingredients to the dry ingredients and mix briefly until you have a smooth batter. Do not stir the batter for too long.
- Carefully fold the diced apples into the batter.
- Divide the batter evenly between the ramekins.
- mix 2 tablespoons of sugar and 1 tablespoon of cinnamon and sprinkle over the muffins.
- Bake the muffins in the preheated oven for approx. 20 minutes until they are golden brown and a toothpick comes out clean.
- Remove the muffins from the oven and leave to cool on a cooling rack.
