Breakfast burger

The perfect start to the day begins with a delicious breakfast that not only pampers the palate, but also touches the heart. Our breakfast burgers are a heavenly combination of crispy bacon, creamy scrambled eggs and fresh mayonnaise, served on tender toast hearts. These irresistible delicacies are not only incredibly tasty and easy to prepare, but also a loving gesture to spoil your loved ones - whether for breakfast, brunch or just in between.

Ingredients
Ingredients for 4 portions
  • 5 eggs (M)
  • 1 tbsp mustard
  • 1 squeeze of lemon juice
  • Salt, pepper
  • 120 ml vegetable oil
  • fresh herbs, to taste
  • 8 slices of toast
  • 2 tbsp butter
  • 4 slices of bacon
  • 2 handfuls of lettuce
  • 1 tbsp olive oil
  • 1 tbsp white wine vinegar

Preparation

  1. First place an egg in the mixing bowl of the hand blender, then carefully stir in the mustard, lemon juice, salt, pepper and vegetable oil. The egg should remain at the bottom of the bowl.
  2. Place the hand blender with the blender attachment on the base of the jug. Switch on, blend for 5 seconds, then slowly pull up through the oil and mustard mixture. Blend for a further 10-20 seconds until the mayonnaise thickens and becomes creamy.
  3. Wash the fresh herbs, shake dry, chop finely and stir into the mayonnaise. Rinse out the mixing bowl and set aside.
  4. Cut the bacon into bite-sized slices and fry in a pan over a medium heat until crispy brown. Place on a plate lined with kitchen paper and set aside.
  5. Cut out 8 toast hearts from the slices of toast using a cutter. Brush with a little butter and fry in a pan until golden brown on both sides.
  6. Separate the remaining 4 eggs. Beat the egg whites in a mixing bowl with the beaters of a hand mixer until frothy, season with salt and pepper and fold in the egg yolks.
  7. Slowly allow the egg mixture to set in the pan over a low heat while stirring.
  8. spread 4 toast hearts with mayonnaise and top with lettuce, scrambled eggs, crispy bacon and fresh cress if desired. Spread the remaining 4 slices of toast with mayonnaise and top the burgers with it.
