Grilled noble fish with green garlic sauce

Today we are serving grilled fish with green garlic sauce. Served with grilled ciabatta bread, this dish is a real eye-catcher. Give it a try and enjoy!

Ingredients
Ingredients for 4 portions
FOR THE FISH
  • 800 g firm fish fillet,
  • ready to cook with & without skin,
  • z. E.g. Arctic char, sea bream,
  • Sea bass, monkfish etc.
  • A few sprigs of rosemary
  • A few sprigs of thyme
  • 1 organic lemon
  • Salt from the mill
  • Ground pepper
  • Vegetable oil for greasing
  • the grill grate
FOR THE GARLIC SAUCE
  • 1 bunch of parsley leaves
  • 25 ml olive oil
  • 6 garlic cloves
  • 2 shallots
  • Zest and juice of 1 organic lemon
  • 50 g mayonnaise
  • 150 g sour cream
  • 1 ciabatta
  • Freshly ground pepper

Preparation

  1. Preheat the grill to 500 °C with the lid open.
  2. Chop the herbs and stems into small pieces. Season the fillets with salt and pepper, sprinkle with herbs and sprinkle with lemon juice.
  3. Grease the grill rack with oil and gradually grill the fillets on the boost zone for 3-4 minutes, depending on their texture.
  4. To make the garlic sauce, finely chop the parsley and stalks and puree very finely with olive oil and a hand blender. Peel and finely dice the garlic and shallots. Mix together the parsley puree, diced garlic and shallots, lemon zest and juice, mayonnaise and sour cream. Season with salt and pepper.
  5. Cut the ciabatta diagonally into slices and grill on the BoostZone at sight. Serve the fish with garlic sauce with the grilled ciabatta.
