Sweet mango wraps

FOR THE WRAPS
- 1 ripe mango
- 150 g peanut butter
- 50 ml coconut milk
- Juice of ½ lime
- 1 handful of cornflakes
- 4 corn cakes
- Powdered sugar
- A few lemon balm leaves
Preparation
- To make the sauce, peel the mango and cut into thin slices down to the stone. Then turn, cut further and dice all the slices. Remove the remaining flesh and place in a blender jug.
- Place the peanut butter, coconut milk and lime juice in the blender jug and blend with a hand blender to a firm sauce. Roughly crush the cornflakes.
- Preheat the grill to 380 °C with the lid open.
- Brush the patties with the sauce. Leave approx. 1 cm around the edge of the pastry. Top with mango and spread with flakes.
- Loosely fold in the sides and roll up from bottom to top.
- Grill the wraps on all sides for several minutes until clear grill patterns appear.
- To serve, cut in half diagonally, sprinkle with lemon balm and powdered sugar and serve with the remaining sauce, if desired.
