Grilled zucchini and hummus wrap

Grilled zucchini and hummus wrap
- 2 large tortillas
- 1 zucchini
- Salt
- Pepper
- 1 tbsp olive oil
- 1 tomato
- 70g kale
- 20g red onions
- 2 slices of cheddar or gouda cheese
- 4 tbsp hummus
Preparation
- Preheat the barbecue to medium heat.
- Wash the zucchini, remove the ends and cut lengthwise into strips. Wash and slice the tomato. Peel and slice the onion and remove the stalks from the kale.
- Toss the zucchini slices in olive oil, sprinkle with salt and pepper and place directly on the grill. grill for 3 minutes, turn and grill for a further 2 minutes.
- Spread 2 tbsp of hummus on the tortillas. Top with a slice of cheese, zucchini slices, ½ cup of kale, onion and tomato slices. Then roll up the tortillas well and grill until you can see grill marks.
