American breakfast muffins with peanut butter

A delicious snack to take away or for a little surprise at the breakfast table, the muffins with creamy peanut butter add an American touch to your breakfast.

Muffin with peanut butter
- 50 g puffed quinoa
- 50 g almond milk
- 30 g rolled oats
- 2 tbsp peanut butter
- 1-2 tbsp maple syrup
- 1 tsp cinnamon
- 1 tsp baking powder
- 1 pinch of vanilla
- 1 ripe banana
- Pinch of salt
Preparation
- Cut the banana into pieces and mash.
- Mix all the ingredients with a hand mixer fitted with a dough hook for 1-3 minutes.
- Pour the batter into a muffin tin and bake for approx. 20 minutes at 190 °C fan oven.
