Beetroot juice with celery, apple and carrot
I'm one of those people who only acquired a taste for beetroot late in life. Because let's be honest, the earthy and sweet taste is a bit peculiar, isn't it? But in the right mixture, it transforms into a fine aroma that will win over even the last skeptic. For example, in a juice mix with apple, carrot, celery and a hint of spicy ginger. Don't believe it? Then grab a slow juicer and try it out for yourself!

Ingredients for 2 portions
Beetroot juice
- 1 small, firm tuber of beet
- 1 large apple
- 2 stalks of celery
- 2 carrots
- Juice of 1/2 a lemon or lime
- 1 small piece of ginger
Preparation
- Wash and dry the apple and celery.
- Peel the beet, ginger and carrots. Cut the beet and apple into long pieces. Also cut the carrots and celery if they are too thick for the shaft.
- Switch on the slow juicer and juice all ingredients except for the lemon/lime.
- Squeeze the lemon/lime and add to the juice. Stir well and pour into a chilled glass.
