Christmas baked apple ice cream with a twist

Everything I love comes together here: cinnamon, baked apples and ice cream. That's all I need to be happy. If you want a slice of our ice cream happiness too, then you should fire up your ice cream maker and make our ice cream really quickly. It's worth it!

Ingredients
Ingredients for 6 portions
  • 3 medium-sized apples
  • 4 tbsp brown cane sugar
  • 2 egg yolks
  • 1 tsp cinnamon powder
  • 1 tsp clove powder
  • 150 ml cream
  • 100 ml milk
  • 2 sachets vanilla sugar
  • 4 cl brown rum
  • 1 cup cloudy apple juice
  • Juice of one lime
  • 100 g butter
  • 1 pinch of salt

Introduction

“The Zipfel, the Zapfel, the Kipfel, the Kapfel, the yellow-red apple!” – brings back childhood memories for me. In my family, a classic baked apple from the oven is always part of the Advent season. However, the highlight was always my sister’s poetry recital of “The Baked Apple” at Christmas. And then at some point I discovered something new: baked apple ice cream.

Preparation

  1. Bring the vanilla sugar, milk and cream to the boil and leave to infuse on the switched-off stove.
  2. Wash, core and slice the apples. Fry the apple slices with the butter in a pan without letting the butter brown. After approx. 3 minutes, add the cinnamon and cane sugar. Stir in the clove powder. Pour in the rum and flambé.
  3. Add the apple and lime juice and simmer everything on a medium heat until a creamy mixture forms. Add a pinch of salt and stir constantly. Pour the apple mixture into a tall blender jug and puree using a hand blender. Pass through a sieve.
  4. Add the egg yolks to the milk and cream and heat again on a low heat, stirring constantly, until a creamy mixture forms. Remove from the heat and stir in the apple mixture.
  5. Pour the ice cream mixture into the ice cream maker and freeze for approx. 45 minutes.
