Tataki beef with shiitake
Tataki beef is cold or lukewarm fillet of beef that is briefly seared and then marinated in a spicy sauce. It melts in the mouth and is a real treat for the palate. We serve the Japanese shiitake mushroom to go with it. Enjoy the taste!

Ingredients for 4 portions
FOR THE TATAKI
- 400 g beef, high quality
- high quality beef,
- z. E.g. fillet or roast beef
- 4 tbsp teriyaki sauce
- Chili a. d. grinder
- Vegetable oil to grease the grill grate
FOR THE MUSHROOMS
- 400 g shiitake
- 4 tbsp soy sauce
- ½ bunch coriander
- Pepper from the mill
- 3 tbsp sesame oil
- 100 g soy beans
- 50 g cleaned frisée
Preparation
- Preheat the grill to 500 °C with the lid open.
- Cut the meat in half to create two rectangular pieces. Grease the grill rack with oil and grill the meat on the boost zone for a few seconds at a time until a pattern appears. Then rub with teriyaki sauce and season with chili.
- Clean the mushrooms, mix with oil and soy sauce and grill for 1-2 minutes. Mix the coriander with the stems and the remaining soy sauce, oil and frisée in the same bowl.
- To serve, divide the mushrooms between the plates. Cut the meat into thin slices and serve. Serve with soy sauce for dipping, if desired.
