Tofu burger with avocado cream

Burgers - who doesn't love them? And when they're fresh and homemade, your mouth is watering! We think you should always try something new and why not start with food? Instead of patties made from beef, simply from tofu. Served with a creamy avocado cream and spicy chili ketchup. Vegan, simple and above all delicious!

Ingredients
Ingredients for 6 portions
For the avocado cream
  • 2 avocado
  • 1 tbsp lemon juice
  • Sea salt
  • Pepper from the mill
For the chili ketchup
  • 90 g tomato purée
  • 1 L sea salt
  • 1 tbsp lemon juice
  • 1/2 agave syrup
  • grated zest of one lemon
  • 1 pinch of chili powder
For the tofu burgers
  • 300 g firm natural tofu
  • 2 pcs. Onion, red
  • 1 pc. Red bell pepper
  • 4 tbsp olive oil
  • 60 g wholemeal breadcrumbs
  • 2 tsp mustard, medium hot
  • 3 tsp paprika powder, hot
  • 2 tsp locust bean gum
  • 1 1/2 tsp sea salt
  • Pepper from the mill
  • 6 burger buns (vegan)
  • Tomato
  • Onion
  • Cucumber
  • Lettuce

For the patties

  1. Mash the tofu with a fork.
  2. Peel and finely chop the onions.
  3. Halve, deseed, wash and finely chop the peppers.
  4. heat 2 tablespoons of olive oil in a pan and sauté the onions and peppers for approx. 5 minutes.
  5. Knead the “pan contents” together with the tofu, breadcrumbs, mustard, 3 tbsp water, paprika powder, locust bean gum and salt to form a dough and then season with pepper.
  6. Now shape the dough into burgers and fry on the grill for approx. 4 minutes on each side.
  7. Then drain the burgers on kitchen paper.

For the chili ketchup

  1. Place all the ingredients in a bowl and mix until you have a uniform mixture.
  2. Put it in the fridge until ready to serve.

For the avocado cream

  1. Wash the basil, shake dry and chop finely.
  2. Halve the avocados, remove the pits and place the flesh in a bowl.
  3. Add the lemon juice.
  4. Season with salt and pepper.

For the burgers

  1. Wash and dry the lettuce.
  2. Peel the onions and cut into rings.
  3. Wash and slice the cucumber and tomatoes.

Now it’s just a case of layering and enjoying! Bun, ketchup, salad, pattie, avocado cream, onion rings, cucumber and tomato, bun. Add homemade chips or potato wedges and you’re ready to enjoy.
