Apricot jam

- 1 kg apricots
- 500 g gelling sugar 2:1
- 1 tbsp lemon juice
Preparation
- Wash the apricots, remove the stones and cut into small pieces.
- Place the apricot pieces in a large pan, add the preserving sugar and lemon juice and stir well.
- Bring to the boil while stirring and cook for 4 minutes until bubbling.
- Do a gelling test: Place a small spoonful of jam on a cold plate. If the mixture sets, the jam is ready. If not, leave to cook a little longer.
- Immediately pour the hot jam into prepared, sterilized jars, seal tightly and turn upside down for 5 minutes.
- Turn the jars upside down and leave to cool completely.
