Cauliflower pizza
Whether at your favorite Italian restaurant, from a delivery service or frozen, pizza simply always tastes good. The only problem with this dish, which is loved by everyone, is the high carbohydrate and fat content. Or is it? Because with this low-carb recipe, you can bake and enjoy your pizza without a guilty conscience. Not only does it fit into your low-carb diet, it also tastes just as good as a normal pizza, making it the perfect alternative. This recipe uses cauliflower for the pizza base instead of carbohydrate-rich wheat flour. When preparing the pizza, it is important that you don't forget to pre-bake the base so that your cauliflower pizza base doesn't get soggy. Of course, you can vary the toppings on your pizza as you wish. Whether tuna, mushrooms or simply cooked ham. What you like on a normal pizza will taste even better on this low-carb pizza.

Cauliflower pizza
- 1 onion
- 2 garlic cloves
- 2 tbsp olive oil
- 1 tin of chunky tomatoes
- Salt, pepper, sugar
- 1 tsp dried oregano
- 1 cauliflower
- 350 g tomatoes
- 2 spring onions
- 250 g mozzarella
- 250 g Gouda cheese
- Basil
Preparation
- Peel and dice the onion and garlic.
- Sauté the chopped garlic and chopped onion in previously heated oil in a pan for about 5 minutes.
- Stir in the chopped tomatoes and simmer for approx. 5 mins.
- Season the tomato sauce with salt, pepper, sugar and oregano.
- Clean the cauliflower and cut it into large florets.
- Blanch the cauliflower in boiling salted water for approx. 4 minutes and then rinse.
- Cut the washed tomatoes and mozzarella into slices and the cleaned spring onions into rings.
- Coarsely grate the Gouda and cauliflower and then mix to a paste.
- Divide the mixture in half and spread each half on a baking tray lined with baking paper to form a thin pizza base.
- Pre-bake the pizza bases for 10 minutes each in a preheated oven (200° fan oven).
- Spread the tomato sauce, tomatoes, spring onions and mozzarella evenly over the two pizza bases and bake each pizza. 12 min. each.
- Wash the basil and pluck the leaves from the dry basil, which you then roughly chop.
- Sprinkle the baked cauliflower pizza with the basil.
