Valentine’s Day burger
Valentine's Day is celebrated on February 14! Just the right occasion to show your loved one how much you love them with a recipe with a heart and/or a romantic dinner for two. Sure, everyone loves a big bunch of flowers or a good bottle of wine, but how about a dinner of homemade burgers from the heart this year?

Ingredients
Ingredients for 15-20 portions
For the rolls
- 400g flour type 550
- 100g flour 1050
- 80g butter
- 15 g salt
- 150 ml water
- 100 ml whole milk
- 30 g honey
- 30 g fresh yeast
- 2 eggs
For the patties
- 275 g broccoli
- 50 g panko flour
- 10 g grated coconut
- 3 eggs
- 2 garlic cloves
- 1 onion
- Salt and pepper
- Clarified butter
For the sauce
- 250 ml olive oil
- 1 lemon
- 1 tsp mustard
- ½ tsp turmeric
- 1 pinch of salt
- 2 fresh egg yolks
To occupy
- 250 g crème fraîche
- 1 clove of garlic
- Herb salt
- Pickled cucumber slices
Preparation
- Mix water and milk with honey.
- Add the yeast and simmer for 10 minutes.
- Add the flour, egg, butter and salt.
- knead for 10 minutes.
- Leave the dough to rise for 1 hour.
- Carefully form individual balls of dough and then hearts.
- Leave the dough pieces to rise for 60 minutes in the switched-off oven.
- mix 1 egg and 4 tablespoons of whole milk.
- Preheat the oven to 225 degrees top/bottom heat.
- Brush the rolls.
- Open the oven briefly after 10 minutes.
- Bake the rolls until they are golden brown.
- Brush the buns with whole milk again immediately after baking.
- Finely chop the broccoli, onions and garlic in a food processor.
- Mix in the remaining ingredients.
- Fry the patties on the barbecue over a medium heat using a serving ring in the shape of a heart.
- For the sauce, mix the egg yolk with salt, mustard and 1 tbsp lemon juice.
- Slowly add the oil to create a creamy mixture.
- Add the lemon zest, turmeric and the remaining lemon juice and season with salt and pepper.
- Mix the crème fraîche with the chopped garlic and herb salt.
- Layer all ingredients: Roll: Crême fraîche, cucumber, pattie, crême fraîche and roll.
