Grilled spiced pumpkin

FOR THE PUMPKIN
  • 1 Hokkaido pumpkin, approx. 800 g
  • 3-4 tbsp olive oil
  • 2 tbsp herb salt
  • 2-3 tbsp chopped parsley
  • 4-6 tbsp roasted pumpkin seeds
  • 4 tbsp pumpkin seed oil

Preparation

  1. Preheat the grill to 240 °C with the lid closed.
  2. Cut the pumpkin in half, remove the seeds and cut the pumpkin into wedges. Rub the slices with oil and season all over with salt.
  3. Place the pumpkin wedges on the grill rack and grill with the lid closed for 15-18 minutes. Turn once.
  4. Place the grilled pumpkin on a platter and top with parsley, pumpkin seeds and pumpkin seed oil.
