Ingredients
Quantity 500 ml
FOR THE SAUCE
- 2 garlic cloves
- 1 red pepper
- 2 fresh organic eggs
- 1 tsp soy sauce
- 1 tbsp fine mustard
- 25 ml white balsamic vinegar
- 50 ml fish stock
- 1 tbsp hot chili sauce
- 250 ml vegetable oil
- 50 ml sesame oil
- Salt from the mill
Preparation
- For the chef’s sauce, peel and roughly chop the garlic. Deseed and roughly chop the peppers.
- Place the garlic, peppers, eggs, soy sauce, mustard, vinegar, stock and chili sauce in a tall blender jug.
- Using a hand blender, first add the oil drop by drop, then work it in smoothly and season the sauce with salt.
