Acai-Blueberry Ice Cream (Vegan & Healthy) – Creamy Nice Cream Recipe
Ingredients
- 400 g blueberries
- 200 g blackberries
- 250 ml coconut milk
- 8 teaspoons of acai powder
- 1 tsp vanilla extract
- 2 ripe avocados
Preparation
- Cut the avocados in half, remove the pit, and scoop out the flesh.
- Blend together with blueberries, blackberries, coconut milk, acai powder, and vanilla extract until smooth and creamy.
- Pour the ice cream mixture into the ice cream maker and let it freeze for about 40–60 minutes.
- Serve immediately, or freeze briefly for a firmer texture.
Tips for the Perfect Acai Ice Cream
- For extra creaminess: use frozen berries
- For extra sweetness: add a little maple syrup or dates
- Without an ice cream maker: Freeze the mixture and stir every 30 minutes
