Crêpes with pear compote & amaretto

For the compote

  • 2 pears
  • 2 tbsp sugar
  • 2 – 3 tbsp amaretto

For the crêpes

  • 200g wheat flour
  • 1 sachet vanilla sugar
  • 2 eggs
  • 300 ml milk
  • some rosemary
  • some powdered sugar

Preparation

  1. Finely dice the pears
  2. Simmer in a pan with the sugar over a medium heat
  3. Season to taste with amaretto
  4. Preheat the crêpe maker to a medium heat
  5. For the dough, place all the ingredients in a bowl one after the other
  6. Mix with a whisk to form a smooth batter
  7. Pour the batter onto the crêpe maker with a ladle
  8. Spread thinly on the plate with a spatula
  9. Turn the crêpe over with the turner and bake both sides briefly
  10. Fold the baked crêpe into quarters
  11. Garnish with pear compote, rosemary and powdered sugar
