Red velvet cupcakes

Ingredients
Ingredients for 24 cupcakes
  • 120 g butter
  • 280 g sugar
  • 2 eggs (M)
  • 300 g wheat flour type 405
  • 1 tsp baking soda
  • 3 tbsp cocoa powder
  • 120 ml vegetable oil
  • 120 ml buttermilk
  • 120 ml beet juice
  • 2 tbsp red food coloring, optional
  • 1 tsp vanilla extract
  • Pinch of salt
  • 100 g cream cheese
  • 250 g powdered sugar
  • 50 g butter
  • Heart-shaped sugar sprinkles, optional

Preparation

  1. Place the room temperature butter and sugar in the mixing bowl and whisk for 3-4 minutes until light and fluffy. Add the eggs one at a time and mix in.
  2. Mix the wheat flour, bicarbonate of soda, cocoa and salt in a bowl and stir into the sugar and egg mixture alternately with the buttermilk, vegetable oil, vanilla extract and beet juice.
  3. add 1-2 tablespoons of red food coloring to intensify the color.
  4. Pour the batter into a piping nozzle and divide between the 24 cupcake cases. Alternatively, use a tablespoon.
  5. Set the air fryer to 180 °C for 18 minutes and bake the cupcakes. Then leave to cool.
  6. Place the remaining butter, powdered sugar and cream cheese in the mixing bowl of the hand blender and whisk to a homogeneous, glossy mixture.
  7. Pour the frosting into a piping bag and chill until the cupcakes have cooled completely. Decorate the cupcakes with the frosting and serve.
