Caramelized romaine lettuce with parmesan and cherry tomatoes

Ingredients
Ingredients for 4 portions
FOR SALAD
- 8 small romaine lettuce hearts
- 1 tsp powdered sugar
- Juice of ½ organic lemon
- 2 tbsp vegetable oil
FOR THE VINAIGRETTE
- 2 shallots
- 1 bunch of radishes
- 80 g mixed herbs,
- z. E.g. parsley, chives,
- Basil
- 50 ml balsamic vinegar
- 25 ml vegetable stock
- 75 ml olive oil
- Salt from the mill
- Pepper a. d. mill
FOR THE TOPPING
- 100 g Parmesan cheese
- 300 g cocktail vine tomatoes
Preparation
- Clean the lettuce, cut in half and cut off the stalk. Sprinkle the cut surfaces with powdered sugar, sprinkle with lemon juice and brush with oil.
- Preheat the grill to 180°C with the lid closed.
- For the vinaigrette, peel and finely dice the shallots. Clean the radishes and cut into fine rings. Pick the herbs and finely chop according to their texture. Mix the prepared ingredients with the balsamic vinegar, stock and oil and season with salt and pepper.
- Grill the romaine lettuce halves cut-side down over a direct heat until a pattern appears. Then turn over and grill the second side in the same way.
- For the topping, coarsely grate the Parmesan and halve or quarter the tomatoes.
- Place the grilled lettuce hearts on a platter, season with the vinaigrette and top with tomatoes and parmesan.
