Grilled stuffed sweet potato

Ingredients
Ingredients for 4 portions
- 4 sweet potatoes
- 250 g celery
- 1/3 cucumber
- 3 tbsp rice vinegar
- 1 tsp sesame oil
- 2 tbsp peanut oil
- 400 g quark
- 4 tbsp milk
- 3 tbsp chopped coriander leaves
- 3 tbsp chopped mint leaves
- 40 g roasted peanuts
- 2 tbsp fried onions
- Salt
- Pepper
Preparation
- Heat the grill to 160 degrees.
- Wash the sweet potatoes and wrap them individually in aluminum foil.
- cook in the grill for 30-40 minutes until the potatoes can be easily pierced with a fork.
- Meanwhile, clean and peel the vegetables and cut into thin strips.
- Mix the carrots and celery with the vinegar, sesame oil and peanut oil and leave to infuse.
- Mix the quark with the milk until smooth.
- Then mix in the herbs and season with salt and pepper to taste.
- Unwrap the cooked sweet potatoes, cut lengthwise and unfold.
- Fold the cucumber strips into the carrot and celery mix.
- Fill the potatoes with quark and salad.
- Top with peanuts and grilled onions and enjoy.
