Grilled stuffed sweet potato

Fancy an alternative to grilled meat? Then we have these delicious grilled stuffed sweet potatoes for you today. Accompanied by a fresh quark dip and carrot, celery and cucumber salad. They are great as a side dish, but also as a full main course. They are a great alternative for those who want to grill vegetarian food. Try it out and be inspired.

Ingredients
Ingredients for 4 portions
  • 4 sweet potatoes
  • 250 g celery
  • 1/3 cucumber
  • 3 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tbsp peanut oil
  • 400 g quark
  • 4 tbsp milk
  • 3 tbsp chopped coriander leaves
  • 3 tbsp chopped mint leaves
  • 40 g roasted peanuts
  • 2 tbsp fried onions
  • Salt
  • Pepper

Preparation

  1. Heat the grill to 160 degrees.
  2. Wash the sweet potatoes and wrap them individually in aluminum foil.
  3. cook in the grill for 30-40 minutes until the potatoes can be easily pierced with a fork.
  4. Meanwhile, clean and peel the vegetables and cut into thin strips.
  5. Mix the carrots and celery with the vinegar, sesame oil and peanut oil and leave to infuse.
  6. Mix the quark with the milk until smooth.
  7. Then mix in the herbs and season with salt and pepper to taste.
  8. Unwrap the cooked sweet potatoes, cut lengthwise and unfold.
  9. Fold the cucumber strips into the carrot and celery mix.
  10. Fill the potatoes with quark and salad.
  11. Top with peanuts and grilled onions and enjoy.
