Grilled zucchini boats

Grilling is a delicious way to eat vegetables. Grilled zucchini boats are a great way to make a quick and healthy dish for your family.

FOR THE BOATS

  • 2 medium-sized zucchinis,
  • 200-250 g each
  • 1 onion
  • 1 clove of garlic
  • ½ bunch parsley
  • Zest of ½ lemon
  • 200 g feta cheese
  • 2-3 tbsp olive oil
  • 2 tsp herb salt

Preparation

  1. Preheat the grill to 160 °C with the lid closed.
  2. Cut the zucchinis in half lengthways and scoop out with a teaspoon. Leave approx. 0.5 cm from the edge. Cut the hollowed-out flesh into small pieces.
  3. Peel and dice the onion and garlic. Finely chop the parsley and stalks. Crumble the cheese.
  4. For the filling, mix the zucchini flesh, onion and diced garlic, parsley, lemon zest and cheese together and season with 1 teaspoon of herb salt. Rub the hollowed-out zucchinis with oil and season with salt. Spread the filling inside and grill for 12-15 minutes with the lid closed.
