Grilled zucchini boats

FOR THE BOATS
- 2 medium-sized zucchinis,
- 200-250 g each
- 1 onion
- 1 clove of garlic
- ½ bunch parsley
- Zest of ½ lemon
- 200 g feta cheese
- 2-3 tbsp olive oil
- 2 tsp herb salt
Preparation
- Preheat the grill to 160 °C with the lid closed.
- Cut the zucchinis in half lengthways and scoop out with a teaspoon. Leave approx. 0.5 cm from the edge. Cut the hollowed-out flesh into small pieces.
- Peel and dice the onion and garlic. Finely chop the parsley and stalks. Crumble the cheese.
- For the filling, mix the zucchini flesh, onion and diced garlic, parsley, lemon zest and cheese together and season with 1 teaspoon of herb salt. Rub the hollowed-out zucchinis with oil and season with salt. Spread the filling inside and grill for 12-15 minutes with the lid closed.
