Lemon mayonnaise
A good mayonnaise can enhance any dish - but with a hint of lemon, it becomes a real taste sensation! The slight acidity of the lemon brings freshness to the creamy texture and goes perfectly with grilled food, sandwiches or as a dip for crispy side dishes. In this article, we show you how you can easily make your own lemon mayonnaise and which dishes go particularly well with it.

Ingredients
Quantity 4 portions
FOR THE MAYONNAISE
- Zest and juice of 2 organic lemons
- 1 tbsp Dijon mustard
- 2 tbsp honey
- 2 tbsp sweet chili sauce
- 1 tsp lemon pepper
- 1 fresh organic egg
- 175 ml vegetable oil
- 25 ml olive oil
- 1 msp. ground coriander
- Salt from the mill
Preparation
- For the mayonnaise, zest and juice the lemons,
- Place the mustard, honey, chili sauce, lemon pepper and egg in a blender jug.
- First add the oil drop by drop, then blend in smoothly with a hand blender. Finally, add the olive oil.
- Season with salt and coriander.
