Lemon mayonnaise

A good mayonnaise can enhance any dish - but with a hint of lemon, it becomes a real taste sensation! The slight acidity of the lemon brings freshness to the creamy texture and goes perfectly with grilled food, sandwiches or as a dip for crispy side dishes. In this article, we show you how you can easily make your own lemon mayonnaise and which dishes go particularly well with it.

FOR THE MAYONNAISE

  • Zest and juice of 2 organic lemons
  • 1 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp sweet chili sauce
  • 1 tsp lemon pepper
  • 1 fresh organic egg
  • 175 ml vegetable oil
  • 25 ml olive oil
  • 1 msp. ground coriander
  • Salt from the mill

Preparation

  1. For the mayonnaise, zest and juice the lemons,
  2. Place the mustard, honey, chili sauce, lemon pepper and egg in a blender jug.
  3. First add the oil drop by drop, then blend in smoothly with a hand blender. Finally, add the olive oil.
  4. Season with salt and coriander.
