Roadkill Chicken
Roadkill chicken is a special way of preparing chicken in which it is laid flat on the grill. This is where the name comes from, as it looks like it has been run over. Rubbed with a lemon pepper rub and served with a chimichurri sauce, it tastes fruity and spicy. Enjoy!

Ingredients for 4 portions
FOR THE CHICKEN
- 2 whole chickens
- approx. 800-1000 g each
- 3-4 tbsp olive oil
- 2 tbsp sea salt
- 1 lemon pepper rub,
- see recipe on page 169
- 1-2 portions of chimichurri sauce
CHIMICHURRI SAUCE
- 3 garlic cloves
- 80 g parsley leaves
- 1 tsp pink pepper berries
- ½ tsp ground cumin
- Juice of ½ organic lemon
- ½ tsp brown sugar
- ½ tsp coarse sea salt
- 100 ml olive oil
Preparation
- Preheat the grill to 180 °C with the lid closed.
- Cut out the backbones of the chicken with scissors. Then press the breast side flat, rub with oil and season with salt.
- Insert the core temperature probe and set the desired target temperature (78-80 °C). Place the chicken breast side down on the grill rack and grill for 25-30 minutes with the lid closed. Then turn and sprinkle all over with lemon pepper rub.
- Grill the chicken for a further 10-15 minutes and serve with chimichurri sauce (core temperature 78-80 °C).
