Ingredients
Ingredients for approx. 25 balls
- 1.5 sweet potatoes (approx. 450g)
- 100g quinoa
- 1 shallot
- 1 clove of garlic
- Fresh parsley
- 80g wheat flour
- 60g panko breadcrumbs + additional amount for later breading
- Sea salt & pepper
- A little olive oil
Preparation
- Peel and dice the sweet potato
- Cook the sweet potato cubes in boiling water for 12 minutes
- Cook the quinoa according to the packet instructions
- Place all ingredients (except breadcrumbs) in a food processor and chop
- Season the sweet potato mixture with salt and pepper to taste
- Add the breadcrumbs and mix well
- Preheat the oven to 180 degrees/convection
- Shape the mixture into small balls
- Turn the balls in the breadcrumbs
- Place the balls on a baking tray lined with baking paper
- Bake the sweet potato balls for 10 minutes at 180 degrees
- Drizzle the balls with olive oil
- Bake for a further 30 minutes until golden brown
