Crispy sweet potato balls

  • 1.5 sweet potatoes (approx. 450g)
  • 100g quinoa
  • 1 shallot
  • 1 clove of garlic
  • Fresh parsley
  • 80g wheat flour
  • 60g panko breadcrumbs + additional amount for later breading
  • Sea salt & pepper
  • A little olive oil

Preparation

  1. Peel and dice the sweet potato
  2. Cook the sweet potato cubes in boiling water for 12 minutes
  3. Cook the quinoa according to the packet instructions
  4. Place all ingredients (except breadcrumbs) in a food processor and chop
  5. Season the sweet potato mixture with salt and pepper to taste
  6. Add the breadcrumbs and mix well
  7. Preheat the oven to 180 degrees/convection
  8. Shape the mixture into small balls
  9. Turn the balls in the breadcrumbs
  10. Place the balls on a baking tray lined with baking paper
  11. Bake the sweet potato balls for 10 minutes at 180 degrees
  12. Drizzle the balls with olive oil
  13. Bake for a further 30 minutes until golden brown
